Ingredients
  

  • 2-3 very ripe bananas (mashed)
  • 1 teaspoon baking soda
  • 1/3 cup unsalted butter (melted)
  • 3/4 cup granulated sugar
  • pinch salt
  • 2 large eggs (beaten)
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups gluten-free all purpose flour with xanthan gum
  • 1/4 teaspoon xanthan gum (leave out if your flour already has it in it)

Method
 

  1. Preheat oven to 350°F (177°C) and prepare a loaf pan.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Stir the baking soda into the mashed bananas.
  4. Stir in the melted butter until combined.
  5. Mix in the granulated sugar, salt, beaten eggs, and vanilla extract.
  6. Gradually add the gluten-free flour and optional xanthan gum, mixing until just combined.
  7. Pour the batter evenly into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
