Ingredients
  

  • 1 ¼ cup chickpea flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup butter
  • ½ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ¾ cup chocolate chips
  • flaky salt for garnish

Method
 

  1. Preheat oven to 350°F (177°C) and line a baking tray with parchment paper.
  2. In a medium bowl, whisk together chickpea flour, baking soda, and salt.
  3. In a large bowl, cream butter and sugars together, then beat in the egg and vanilla until combined and lightened in color.
  4. Pour dry ingredients into the wet and mix until everything is combined.
  5. Stir in chocolate chips.
  6. Scoop cookie dough into medium-sized balls and place on prepared baking tray, leaving space between cookies. Optionally, press extra chocolate chips into tops.
  7. Bake for 9-11 minutes, until edges are just beginning to turn golden brown.
  8. While warm, use a round glass to scoop cookies back into a round shape. Optionally garnish with flaky salt.
