  • 2 ½ cups gluten-free all-purpose flour with xanthan gum
  • 2 ½ tsp instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 cup warm water (110°F)
  • 2 tbsp olive oil
  • ¾ cup pizza sauce (store-bought or homemade)
  • 1 cup shredded vegan cheese
  • Fresh basil leaves

Method
 

  1. In a large bowl, mix flour, yeast, sugar, and salt. Add water and olive oil and stir until a dough forms.
  2. Knead in a stand mixer with the dough attachment for 5–7 minutes until smooth. Adjust with 1 tbsp flour at a time if too soft, or 1 tbsp water if too dry, aiming for a soft and slightly sticky dough.
  3. Lightly oil the top of the dough, cover, and let rise in a warm spot for 1 hour or until doubled.
  4. Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
  5. Transfer the dough to lightly floured parchment paper and flatten into a 12-inch circle using your fingers.
  6. Spread sauce evenly over the dough and sprinkle generously with vegan cheese shreds.
  7. Transfer with the parchment paper to a baking sheet or preheated stone.
  8. Bake for 10-12 minutes or until crust is golden and cheese is melted and bubbly.
