Ingredients
  

  • 3 cups apples (such as Honeycrisp, Fuji, or Granny Smith, peeled, cored, and thinly sliced)
  • 1 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • ¼ tsp ground nutmeg
  • ½ cup unsalted butter (melted)
  • ½ cup sugar
  • ½ cup gluten-free all-purpose flour blend
  • ¼ cup cornstarch
  • 1 large egg

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease an 8-inch pie dish or baking dish.
  2. In a large mixing bowl, toss sliced apples with 1 tbsp sugar, lemon juice, cinnamon, and nutmeg. Set aside.
  3. In another large mixing bowl, combine melted butter, ½ cup sugar, gluten-free flour blend, cornstarch, and egg. Stir to combine into a batter.
  4. Transfer the apple mixture to the prepared pie dish, spreading it into an even layer.
  5. Carefully spread the batter on top of the apples, covering them evenly.
  6. Bake for 40–45 minutes, or until the apples are tender and the top is golden brown. Cover loosely with aluminum foil after 25-30 minutes if browning too quickly.
  7. Let cool for 10–15 minutes before serving to allow the juices to thicken slightly. Serve warm on its own or with ice cream or whipped cream.
