Ingredients
Method
- Preheat oven to 350°F (175°C) and lightly grease an 8-inch pie dish or baking dish.
- In a large mixing bowl, toss sliced apples with 1 tbsp sugar, lemon juice, cinnamon, and nutmeg. Set aside.
- In another large mixing bowl, combine melted butter, ½ cup sugar, gluten-free flour blend, cornstarch, and egg. Stir to combine into a batter.
- Transfer the apple mixture to the prepared pie dish, spreading it into an even layer.
- Carefully spread the batter on top of the apples, covering them evenly.
- Bake for 40–45 minutes, or until the apples are tender and the top is golden brown. Cover loosely with aluminum foil after 25-30 minutes if browning too quickly.
- Let cool for 10–15 minutes before serving to allow the juices to thicken slightly. Serve warm on its own or with ice cream or whipped cream.
Notes
- Use a mix of apple varieties for the best flavor and texture.
- Don't overmix the batter for the topping; a few lumps are okay.
- For cleaner slices, chill the pie completely before serving or refrigerating.
