- Preheat your waffle iron to the manufacturer's recommended setting (medium-high heat).
- In a large bowl, whisk together the eggs, milk, melted butter, and vanilla extract until thoroughly combined.
- Add the buckwheat flour, sugar, baking powder, and salt to the wet ingredients. Stir until just combined; a few small lumps are perfectly okay. Let the batter rest for 5 minutes to slightly thicken.
- Lightly grease the hot waffle iron with cooking spray or a little butter.
- Pour the appropriate amount of batter onto the center of the iron, spreading it slightly if needed.
- Close the lid and cook for 4-5 minutes, or until the steam stops and the waffles are beautifully golden brown and crisp. Carefully remove the waffle.
- Repeat step 6 with the remaining batter.
- Serve warm, topped with maple syrup, fresh fruit, butter, or whipped cream for a delightful breakfast experience.
