Ingredients
  

  • 2 tbsp butter
  • 2 tbsp gluten-free all-purpose flour
  • ¾ cup gluten-free beer
  • ½ cup whole milk
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded Gruyere or Swiss cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp Dijon mustard
  • tsp cayenne pepper

Method
 

  1. In a medium saucepan over medium heat, melt the butter. Whisk in the gluten-free flour and cook for 1 minute, stirring constantly.
  2. Slowly whisk in the gluten-free beer and whole milk until smooth.
  3. Stir in garlic powder, onion powder, Dijon mustard, and cayenne pepper. Cook, stirring frequently, until the mixture thickens slightly, about 3–5 minutes.
  4. Reduce the heat to low and add the cheddar cheese and Gruyere cheese in handfuls, stirring until fully melted before adding more.
  5. Serve warm with gluten-free crackers, bread, pretzels, vegetables, or sliced potatoes.
