Ingredients
  

  • 12 oz package bacon (medium to thick cut)
  • 1/2 cup brown sugar
  • 2 teaspoons red chili pepper flakes (or more or less)
  • Foil to line the pan
  • Parchment paper to line the pan
  • 1/4 teaspoon black pepper

Method
 

  1. Line a half sheet pan with foil and parchment paper, then arrange bacon slices without overlapping.
  2. Sprinkle bacon tops with 1/2 cup brown sugar and red chili pepper flakes.
  3. Place the baking sheet into a COLD oven, then preheat to 375 degrees F. Once the oven reaches 375 degrees F, rotate the baking sheet 180 degrees and continue baking for 8-10 additional minutes until caramelized.
  4. Remove the bacon from the oven and let it sit on the sheet pan for 5 minutes. Use tongs to lift each slice, letting fat drip, then transfer to a serving platter. Let the bacon sit for 5-10 more minutes then serve.

Notes

- For extra crispiness, ensure the bacon slices are not overlapping on the parchment paper. Give them a little space.
- Don’t skip starting the bacon in a cold oven. This allows the fat to render slowly, resulting in crispier bacon and a more evenly caramelized sugar coating.
- If your bacon isn't as crispy as you'd like, you can return it to the oven for another 2-3 minutes, keeping a close eye on it to prevent burning.
- Leftover billionaire bacon can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week. Reheat gently in a warm oven for a few minutes to restore crispness.
