📝 Ingredients:

  • 🥛 25 cl heavy cream
  • 🥚 2 eggs
  • 🥚 1 egg white
  • 🍬 200 g powdered sugar
  • 🌸 1 teaspoon red food coloring
  • 🫐 150 g blackberries
  • 🌟 1 packet baking powder
  • 🧂 1 pinch of salt

📋 Directions:

  1. 🫐 Prepare the Blackberries: Wash the blackberries and set aside.
  2. 🌾 Mix Dry Ingredients: Sift the flour and baking powder into a bowl. Add a pinch of salt and mix well.
  3. 🥚 Beat Eggs: In a separate mixing bowl, beat the 2 whole eggs. Gradually add the granulated sugar while continuing to beat.
  4. 🥛 Combine Wet Ingredients: Slowly incorporate the heavy cream into the egg mixture while whisking.
  5. 🌾 Add Dry Ingredients: Gradually add the flour mixture into the wet ingredients, whisking until a smooth batter forms.
  6. 🫐 Add Blackberries: Roughly chop 100 g of blackberries and fold them into the batter.
  7. 🧁 Bake: Divide the batter into muffin molds lined with paper cups. Bake in a preheated oven at 190°C (375°F) for 25 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool completely.
  8. 🍬 Prepare the Glaze: Whisk the egg white with the powdered sugar until smooth. Add the red food coloring and mix well.
