Blackberry Muffins

  1. ๐Ÿซ Prepare the Blackberries: Wash the blackberries and set aside.
  2. ๐ŸŒพ Mix Dry Ingredients: Sift the flour and baking powder into a bowl. Add a pinch of salt and mix well.
  3. ๐Ÿฅš Beat Eggs: In a separate mixing bowl, beat the 2 whole eggs. Gradually add the granulated sugar while continuing to beat.
  4. ๐Ÿฅ› Combine Wet Ingredients: Slowly incorporate the heavy cream into the egg mixture while whisking.
  5. ๐ŸŒพ Add Dry Ingredients: Gradually add the flour mixture into the wet ingredients, whisking until a smooth batter forms.
  6. ๐Ÿซ Add Blackberries: Roughly chop 100 g of blackberries and fold them into the batter.
  7. ๐Ÿง Bake: Divide the batter into muffin molds lined with paper cups. Bake in a preheated oven at 190ยฐC (375ยฐF) for 25 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool completely.
  8. ๐Ÿฌ Prepare the Glaze: Whisk the egg white with the powdered sugar until smooth. Add the red food coloring and mix well.
