📝 Ingredients:
Serves 4
- 🥭 3 mangoes
- 🌸 4 passion fruits
- 🍋 2 limes
- 🍬 200g sugar
- 🥛 30cl heavy cream (chilled)
- 🍃 4 large gelatin leaves (8g)
- 🥄 2 teaspoons oil
📋 Directions:
- Prepare the Syrup:
- Bring 15cl of water and 🍬 sugar to a boil in a saucepan. Remove from heat as soon as the sugar is dissolved.
- Soften the Gelatin:
- Soak the 🍃 gelatin leaves in cold water until softened. Drain them by squeezing out excess water, then dissolve them in the warm syrup.
- Make the Fruit Puree:
- Cut the 🥭 mangoes in half, remove the pits, and purée the flesh in a blender.
- Halve the 🌸 passion fruits and strain the pulp through a sieve to extract the juice.
- Combine the mango purée and passion fruit juice to make 25cl of fruit mixture. Mix this with the syrup and add the 🍋 lime juice.
- Whip the Cream:
- Whip the chilled 🥛 heavy cream until it forms stiff peaks. Gently fold the whipped cream into the cooled fruit mixture until well combined.
- Set the Bavarois:
- Lightly oil a fluted mold and pour in the mixture.
- Refrigerate for at least 5 hours to set.
- Serve:
- Unmold the bavarois onto a serving plate and decorate with slices of seasonal or exotic fruits, such as starfruit or extra 🌸 passion fruit.
