Tropical Fruit Bavarois

🌴 Delight in the light and creamy textures of this Tropical Fruit Bavarois, blending mango, passion fruit, and lime for a refreshingly exotic dessert. Perfect for special occasions or summer gatherings! 🍋🥭


📝 Ingredients:

Serves 4

  • 🥭 3 mangoes
  • 🌸 4 passion fruits
  • 🍋 2 limes
  • 🍬 200g sugar
  • 🥛 30cl heavy cream (chilled)
  • 🍃 4 large gelatin leaves (8g)
  • 🥄 2 teaspoons oil

📋 Directions:

  1. Prepare the Syrup:
    • Bring 15cl of water and 🍬 sugar to a boil in a saucepan. Remove from heat as soon as the sugar is dissolved.
  2. Soften the Gelatin:
    • Soak the 🍃 gelatin leaves in cold water until softened. Drain them by squeezing out excess water, then dissolve them in the warm syrup.
  3. Make the Fruit Puree:
    • Cut the 🥭 mangoes in half, remove the pits, and purée the flesh in a blender.
    • Halve the 🌸 passion fruits and strain the pulp through a sieve to extract the juice.
    • Combine the mango purée and passion fruit juice to make 25cl of fruit mixture. Mix this with the syrup and add the 🍋 lime juice.
  4. Whip the Cream:
    • Whip the chilled 🥛 heavy cream until it forms stiff peaks. Gently fold the whipped cream into the cooled fruit mixture until well combined.
  5. Set the Bavarois:
    • Lightly oil a fluted mold and pour in the mixture.
    • Refrigerate for at least 5 hours to set.
  6. Serve:
    • Unmold the bavarois onto a serving plate and decorate with slices of seasonal or exotic fruits, such as starfruit or extra 🌸 passion fruit.
