This spectacular dessert combines layers of sponge cake, strawberry ice cream, and a golden Italian meringue. A show-stopping treat for any special occasion!

For the Sponge Cake:
- π₯ 6 eggs
- π¬ 180 g sugar
- πΎ 180 g flour
For the Italian Meringue:
- π₯ 3 egg whites
- π¬ 180 g sugar
- π§ 5 cl water
For the Filling:
- π 1 liter strawberry ice cream
π Directions:
- π§ Prepare the Sponge Cake:
- In a mixing bowl, whisk the eggs and sugar together.
- Place the bowl over a double boiler and continue whisking until the mixture reaches 104Β°F (40Β°C).
- Remove from the heat and whisk vigorously until the mixture triples in volume and cools.
- Gently fold in the sifted flour using a spatula.
- Pour the batter into a greased and floured rectangular mold (40 x 25 cm).
- Bake at 350Β°F (180Β°C) for 20β30 minutes. Let cool completely, then cut out one 8-inch (20 cm) and one 6-inch (15 cm) diameter circle.
- π Assemble the Bombe:
- Allow the strawberry ice cream to soften slightly for easier handling.
- Line a 2-liter bowl with plastic wrap. Spread half the ice cream evenly in the bowl.
- Place the smaller sponge circle on top, pressing gently.
- Add the remaining ice cream, smoothing the surface, and top with the larger sponge circle.
- Cover with plastic wrap and freeze until firm.
- π¬ Make the Italian Meringue:
- Heat the sugar and water in a saucepan until the syrup reaches 212Β°F (100Β°C).
- Begin whisking the egg whites to soft peaks.
- When the syrup reaches 250Β°F (121Β°C), slowly pour it over the egg whites in a thin stream while continuing to whisk. Whisk until stiff, glossy peaks form and the meringue cools.
- π₯ Decorate and Finish:
- Remove the bombe from the freezer and invert onto a chilled serving platter. Remove the plastic wrap.
- Generously spread the Italian meringue over the bombe, covering it completely.
- Use a kitchen torch or briefly place it under a very hot grill to brown the meringue.
- π Serve and Enjoy:
- Garnish with fresh red berries and serve immediately for a stunning and delicious dessert!
