Speculoos Tiramisu Trifle

📝 Ingredients:

  • 3 large eggs 🥚
  • 250 g (8.8 oz) mascarpone 🧀
  • 180 g (6.3 oz) heavy cream 🥛
  • 16 speculoos cookies 🍪
  • 120 g (4.2 oz) white chocolate 🍫
  • 100 g (3.5 oz) sugar 🧂
  • 8 cl (2.7 fl oz) brewed coffee ☕
  • 1/2 sheet gelatin 🌿

📋 Directions:

  1. 🍳 Separate the eggs. In a bowl, whisk the egg yolks and sugar until the mixture becomes pale and fluffy. Add the mascarpone and mix until smooth. Stir in the brewed coffee.
  2. 🥄 In a separate bowl, beat the egg whites to stiff peaks. Gently fold them into the mascarpone mixture. Set aside.
  3. 🍪 Crush the speculoos cookies into crumbs using a food processor or by hand. Reserve.
  4. 🍫 Melt the white chocolate in a double boiler with the heavy cream. Meanwhile, soak the gelatin sheet in cold water until softened. Squeeze out excess water and add the gelatin to the melted chocolate mixture. Stir until fully dissolved. Cover and refrigerate for 24 hours.
  5. 🥛 The next day, whip the chilled chocolate cream until stiff peaks form. Transfer the whipped cream to a piping bag fitted with a star tip.
  6. 🥣 Assemble the trifles in individual serving glasses: start with a layer of crushed speculoos, followed by the coffee-flavored mascarpone mixture. Repeat the layers and finish with a top layer of speculoos crumbs and the white chocolate whipped cream.
