For the Cake:

  • 🍬 250 g granulated sugar

  • 🌾 60 g all-purpose flour, sifted (+15 g for the pan)
  • 🌽 75 g potato starch
  • 🧈 100 g butter (+15 g for the pan)
  • 🧂 1 pinch of salt

For the Decoration:

  • 🍬 300 g powdered sugar
  • 🥚 1 egg white
  • 🍋 Juice of 1/2 lemon
  • 🍊 Zest of 3 untreated oranges, finely grated

📋 Instructions

1️⃣ Prepare the Cake Batter:

  1. 🔥 Preheat your oven to 300°F (150°C). Butter and flour a round cake pan.
  2. 🍳 In a large bowl, beat the egg whites with a pinch of salt until very stiff peaks form.
  3. 🍊 Gently fold in the orange zest, granulated sugar, flour, and potato starch, incorporating them one at a time.
  4. 🧈 Carefully mix in the melted and cooled butter. Pour the batter into the prepared cake pan.

2️⃣ Bake the Cake:
