  • 🍐 4 pears (firm and ripe)
  • 🍫 1 bar of dark baking chocolate
  • 🥛 8 cl heavy cream
  • 🍬 180 g sugar
  • 🌟 1 vanilla bean
  • 🍋 1 tablespoon lemon juice

📋 Directions:

  1. 🍐 Prepare the Pears:
    • Peel the pears, keeping them whole with the stems intact.
  2. 🔥 Make the Poaching Syrup:
    • In a large saucepan, combine 80 cl of water, lemon juice, the split and scraped vanilla bean, and sugar. Bring the mixture to a simmer.
  3. Poach the Pears:
    • Add the pears to the simmering syrup. Reduce the heat and poach for 20–25 minutes, depending on the ripeness of the pears.
    • To check doneness, insert the tip of a knife into the pear; it should slide in easily. Allow the pears to cool slightly in the syrup.
  4. 🍫 Make the Chocolate Sauce:
    • Grate the chocolate into a heatproof bowl.
    • Heat the heavy cream until it begins to simmer, then pour it over the grated chocolate. Stir until the chocolate is melted and the sauce is smooth.
  5. Assemble and Serve:
    • Place each pear in a deep serving plate. Drizzle generously with the warm chocolate sauce.
    • Serve immediately and enjoy this elegant dessert!
