  • 🍬 130 g sugar
  • 💧 1 liter water
  • 🍫 140 g dark baking chocolate
  • 🥛 10 cl milk
  • 🥛 15 cl heavy cream
  • 🥚 2 egg yolks
  • 🍦 12 scoops of vanilla ice cream
  • 🌰 4 tablespoons chopped almonds

📋 Directions:

  1. 🍐 Peel the Pears:
    • Carefully peel the pears, keeping their shape intact.
  2. 🔥 Poach the Pears:
    • In a large saucepan, heat the water with 100 g of sugar until it boils.
    • Once boiling, add the pears and reduce the heat to a gentle simmer. Poach the pears for 10 minutes.
    • Remove the pears from the syrup, let them cool slightly, and cut them in half.
  3. 🥄 Prepare the Chocolate Sauce:
    • In a small bowl, whisk the egg yolks with 30 g of sugar until pale and fluffy.
    • In a saucepan, heat the milk and cream until just simmering. Gradually pour this mixture over the egg yolks while whisking continuously.
    • Return the mixture to the saucepan and cook over low heat, stirring constantly, until it reaches 184°F (84°C).
    • Pour the hot mixture over the chocolate pieces and stir until the chocolate is fully melted and the sauce is smooth.
  4. Assemble the Dessert:
    • Divide the chocolate sauce among 4 serving bowls.
    • Place pear halves in each bowl, add scoops of vanilla ice cream, and sprinkle with chopped almonds.
