For the Choux Pastry:

  • 🥛 15 cl milk
  • 💧 15 cl water
  • 🧈 130 g unsalted butter, cubed
  • 🌾 170 g flour
  • 🍬 5 g granulated sugar
  • 🌟 1 pinch of salt

📋 Directions:

  1. 🥄 Prepare the Choux Pastry:
    • In a large saucepan, bring the water, milk, salt, sugar, and butter to a boil.
    • Remove from the heat and add the flour all at once, stirring vigorously with a spatula.
    • Return the pan to medium heat and stir until the dough forms a ball and pulls away from the sides of the pan.
  2. Incorporate the Eggs:
    • Off the heat, add the eggs one at a time, mixing thoroughly after each addition until smooth.
    • Transfer the dough to a piping bag fitted with a plain round tip.
  3. 🔥 Bake the Choux:
    • Preheat the oven to 400°F (200°C).
    • Pipe 3 cm choux puffs onto a parchment-lined baking sheet, spacing them evenly.
    • Lightly brush the tops with milk to smooth the surface.
    • Bake for 18–20 minutes without opening the oven door. Allow the choux to cool completely on a wire rack.

    • In a stand mixer, whip the softened butter, cream cheese, and powdered sugar for 2 minutes until fluffy.

  5. Assemble the Cream Puffs:
    • Slice each choux puff in half horizontally.
    • Pipe the kaffir lime cream generously onto the bottom halves, then replace the tops.
