Matcha Coconut Ice Cream

A vegan ice cream infused with matcha and creamy coconut milk, topped with toasted coconut flakes for a tropical twist.

Ingredients:

  • 🍵 2 tbsp matcha powder
  • 🥥 1 3/4 cups (400 ml) coconut milk
  • 🍬 1/2 cup (100 g) sugar
  • 🍶 3/4 cup (200 ml) coconut cream
  • 🍋 1 tsp lemon juice

Directions:

🍵 Prepare the matcha mixture:

  1. In a small bowl, dissolve 🍵 matcha powder in a few tablespoons of warm 🥥 coconut milk until smooth.

🥥 Combine the ingredients:

  1. In a mixing bowl, whisk together the remaining 🥥 coconut milk, 🍶 coconut cream, 🍬 sugar, 🍋 lemon juice, and the dissolved matcha mixture. Stir until fully combined.

🍨 Churn the ice cream:

  1. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until creamy.

  1. Serve in bowls and sprinkle with toasted coconut flakes for a crunchy finish.
