  • 🧈 100g softened butter
  • 🍬 100g granulated sugar
  • 🥚 1 egg
  • 🥚 1 egg yolk
  • 🌾 1 teaspoon potato starch

📋 Directions:

  1. Prepare the Hazelnut Cream:
    • In a bowl, beat the 🧈 softened butter with the 🍬 sugar until smooth.
    • Stir in the 🥚 egg, 🌰 ground hazelnuts, and 🌾 potato starch until fully combined.
  2. Assemble the Pithiviers:
    • Unroll one sheet of 🥐 puff pastry and place it on a baking tray.
    • Spread the hazelnut cream over the pastry, leaving a 2cm (3/4 inch) border.
    • Brush the edges with the 🥚 egg yolk.
    • Cover with the second sheet of pastry, pressing the edges together to seal. Pinch the edges firmly.

    • Brush the top of the pastry with the remaining 🥚 egg yolk.
