- π White bread slices β 2
- π₯ Heavy cream (very cold) β 35 cl (1.5 cups)
- π± Chives β 6 sprigs, chopped
- πΏ Fresh dill β 2 sprigs
- πΈ Pink peppercorns β 1 teaspoon
- π§ Salt β To taste
- β« Black pepper β To taste
π Directions:
- π Prepare the bread: Remove the crusts from the bread slices and tear the bread into pieces. Mix with the heavy cream in a bowl and refrigerate until ready to use.
- π± Prep the herbs: Finely chop the chives. Cut the smoked salmon into thin strips.
- π Prepare the fresh salmon: Cut the salmon fillets into large chunks. Using a food processor, blend the fresh salmon chunks with the egg whites, soaked bread with cream, salt, and pepper until roughly mixed.
- πΏ Combine ingredients: Transfer the salmon mixture to a bowl and stir in the chopped chives. Adjust seasoning if needed.
- π₯£ Assemble the terrine: Line a loaf pan with parchment paper. Pour half the salmon mixture into the pan and smooth the surface. Layer the smoked salmon strips evenly over the mixture, then top with the remaining salmon mixture and spread evenly.
- π₯ Bake: Preheat the oven to 140Β°C/150Β°C (285Β°F/300Β°F). Place the loaf pan in a water bath and bake for 1 hour. Check the doneness by inserting a knife into the center; it should come out clean.
- βοΈ Cool and chill: Let the terrine cool to room temperature. Cover with plastic wrap and refrigerate for 12 hours to set.
