Fig & Honey Ice Cream

A creamy, all-natural ice cream made with fresh figs and honey, featuring delicate chunks of figs for a refined texture and flavor.

Ingredients:

  • 🍯 1/3 cup (100 g) honey
  • 🍇 7 oz (200 g) fresh figs (chopped)
  • 🥛 1 cup (250 ml) whole milk
  • 🥛 1 cup (250 ml) heavy cream
  • 🍬 1/4 cup (50 g) sugar
  • 🧂 A pinch of salt

Directions:

🍯 Prepare the base:

  1. In a saucepan, heat 🥛 milk, 🥛 cream, and 🍯 honey over low heat.
  2. Add 🍬 sugar and 🧂 salt, stirring until fully dissolved.

🍇 Add the figs:

  1. Blend half of the 🍇 figs into a smooth purée and stir into the base mixture.
  2. Reserve the remaining chopped figs for texture.

🍨 Chill and churn:

  1. Cool the mixture in the refrigerator for at least 2 hours.
  2. Pour the chilled mixture into an ice cream maker and churn until creamy.
  3. Fold in the reserved 🍇 fig pieces during the last few minutes of churning.
