Classic Peach Melba

📝 Ingredients:

Serves 4

  • 🍨 1/2 liter vanilla ice cream
  • 🍑 4 white peaches
  • 🍓 250g raspberries
  • 🍬 150g granulated sugar
  • 🍋 Juice of 1/2 lemon
  • 🍬 40g powdered sugar
  • 🍹 1 tablespoon kirsch (cherry liqueur)
  • 🌰 30g sliced almonds
  • 🎂 Whipped cream (canned)

📋 Directions:

  1. Poach the Peaches:
    • Bring 25cl of water and the 🍬 granulated sugar to a boil in a saucepan.
    • Add the peeled and halved 🍑 peaches and poach gently over low heat for 5 minutes.
    • Let the peaches cool slightly, then drain and set aside.
  2. Prepare the Raspberry Sauce:
    • In a blender, purée the 🍓 raspberries with the 🍋 lemon juice and 🍬 powdered sugar until smooth.
    • Strain the sauce through a fine sieve to remove the seeds, then stir in the 🍹 kirsch.
  3. Toast the Almonds:
    • In a dry nonstick skillet, toast the 🌰 sliced almonds over medium heat until golden. Set aside.
  4. Assemble the Dessert:
    • Scoop 🍨 vanilla ice cream into 4 serving dishes.
    • Place 2 peach halves on top of the ice cream in each dish.
    • Drizzle generously with the raspberry sauce and sprinkle with the toasted 🌰 almonds.
    • Finish with a dollop of 🎂 whipped cream for decoration.
