  • 🥛 2/3 cup heavy cream (15 cl)

  • 🍬 3/4 cup granulated sugar (150 g)
  • 🍫 9.5 oz dark baking chocolate (270 g)

📋 Directions:

  1. 🥐 Prepare the Puff Pastry:
    • Roll out the puff pastry and cut it into 15 rectangles measuring 4.5 x 2.5 inches (12 x 6 cm).
    • Place the rectangles on a baking sheet lined with parchment paper. Refrigerate for 30 minutes.
  2. 🥚 Brush and Bake:
    • Brush the rectangles with a mixture of egg yolk and a little water.
    • Cover with another sheet of parchment paper and place a second baking sheet on top to weigh them down.
    • Bake at 410°F (210°C) for 20 minutes, until golden.
  3. 🍫 Make the Chocolate Ganache:
    • Heat the milk and cream in a saucepan over medium heat until just simmering.
    • In a bowl, whisk together 3 egg yolks and the sugar until the mixture is pale and creamy.
  4. 🥄 Thicken the Cream:
    • Slowly pour the hot milk-cream mixture into the egg mixture while whisking constantly.
    • Return the mixture to the saucepan and cook over low heat, stirring continuously, until thickened.
  5. 🧑‍🍳 Incorporate the Chocolate:
    • Finely chop the chocolate and pour the hot mixture over it. Stir until smooth and glossy.
    • Allow the ganache to cool to room temperature, then transfer to a piping bag and refrigerate for 1 hour.

    • Alternate layers of puff pastry rectangles and chocolate ganache.
    • Finish with a top layer of puff pastry.
