  • 🍫 130 g white chocolate shavings
  • 🌰 130 g pralinettes (or finely chopped praline nuts)
  • 🍇 12 teaspoons raspberry jam
  • 🥛 40 cl heavy cream, very cold

📋 Directions:

  1. 🥚 Prepare the Meringues:
    • In a large mixing bowl, whip the egg whites with an electric mixer on medium speed.
    • Once the egg whites begin to form soft peaks, gradually increase the speed and add the granulated sugar, followed by the sifted powdered sugar, a little at a time, while continuing to whip until stiff peaks form.

    • Transfer the whipped egg whites into a piping bag.
    • Pipe 24 meringues, about 2 inches (5 cm) in diameter, onto a perforated baking sheet lined with a silicone mat or parchment paper.
    • Bake in a preheated oven at 195°F (90°C) for 1 hour and 30 minutes, occasionally opening the oven door to release moisture. Let the meringues cool completely at room temperature.

    • In a chilled bowl, whip the very cold heavy cream with an electric mixer until stiff peaks form, creating a smooth Chantilly cream.
