Beef Paupiettes with Chanterelles

📝 Ingredients (Serves 4):

  • 🥩 2 slices of sirloin steak (faux-filet)
  • 🥔 500 g (1.1 lbs) potatoes
  • 🍄 200 g (7 oz) chanterelle mushrooms
  • 🥄 2 tbsp veal stock powder
  • 🌾 2 tbsp breadcrumbs
  • 🥛 2 tbsp cream
  • 🥚 2 egg yolks
  • 🧅 2 onions, finely sliced
  • 🧈 30 g (2 tbsp) butter
  • 🌿 6 sprigs of chervil, chopped
  • 🛢️ 2 tbsp olive oil
  • 🌰 2 pinches nutmeg
  • 🧂 Salt, to taste
  • ⚫ Pepper, to taste

📋 Directions:

  1. 🥩 Prepare the Beef:
    Trim and flatten the sirloin steaks. Brush them lightly with olive oil, season with salt and pepper, and refrigerate in plastic wrap until needed.
  2. 🍄 Make the Filling:
    Clean the chanterelles and cut larger mushrooms into quarters. Sauté them in a pan with 1 tbsp olive oil, 10 g (2 tsp) butter, the sliced onions, and nutmeg for 10 minutes. Season with salt and pepper, stir, and cook for an additional 5 minutes. Blend the mixture, then combine with breadcrumbs, egg yolks, and chopped chervil. Let cool.
  3. 🥔 Cook the Potatoes:
    Peel, rinse, and dice the potatoes. Pat them dry and sauté in a skillet with 20 g (1.5 tbsp) butter for 5 minutes until golden. Add 1 tbsp veal stock powder and cook for 10 minutes, then pour in 1/2 cup water and turn off the heat.
  4. 🥩 Assemble the Paupiettes:
    Preheat the oven to 150°C (300°F). Spread the mushroom filling over the steaks and roll them up tightly to form paupiettes. Secure with kitchen twine if needed. Place the paupiettes on top of the potatoes in a baking dish.
  5. 🍶 Prepare the Sauce:
    Deglaze the skillet with 1 cup water, 1 tbsp veal stock powder, and cream. Stir well and pour the sauce over the potatoes and paupiettes in the dish.
