Baked Ground Beef with Eggplants and Feta

A hearty and flavorful dish combining tender eggplants, savory ground beef, and tangy feta cheese. This baked casserole is perfect for a comforting family meal.

📝 Ingredients:

  • 500 g (1.1 lbs) ground beef 🥩
  • 3 eggplants 🍆
  • 4 onions, finely chopped 🧅
  • 3 garlic cloves, minced 🧄
  • 350 g (12 oz) canned peeled tomatoes 🍅
  • 200 g (7 oz) feta cheese 🧀
  • 2 tablespoons olive oil 🫒
  • Salt 🧂
  • Black pepper ⚫

📋 Directions:

  1. 🍆 Preheat your oven to 200°C (400°F). Slice the eggplants lengthwise and place them on a baking rack. Bake for 1 hour, turning them over after 30 minutes.
  2. 🧄 Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the onions and garlic until golden, about 5-10 minutes. Turn off the heat and cover.
  3. 🍅 Once the eggplants are cooked, keep the oven on. Scoop out the flesh of the eggplants with a fork and place it in a blender. Add the ground beef, sautéed onions and garlic, canned tomatoes, and 1 tablespoon of olive oil. Season with salt and pepper, then blend briefly until combined.
  4. 🧀 Cut the feta into small cubes and stir them into the mixture.
  5. 🥣 Pour the mixture into a baking dish. Bake in the preheated oven for 45 minutes. For added texture, you can sprinkle breadcrumbs on top or decorate with slices of eggplant before baking.
  6. 🌟 Serve hot with mashed potatoes and a fresh arugula salad for a complete meal.
