Raspberry Pistachio Opera Cake

A modern take on the classic opera cake, featuring delicate layers of pistachio sponge and raspberry mousse, topped with a pink mirror glaze. A true masterpiece to impress your guests!

Ingredients:

  • 🌿 1 1/4 cups all-purpose flour
  • 🌿 3/4 cup pistachios, finely ground
  • 🍬 3/4 cup sugar (divided: 1/2 cup for the batter, 1/4 cup for the mousse)
  • 🥚 4 large egg whites, whipped to stiff peaks
  • 🍓 1 cup raspberry purée (homemade or store-bought)
  • 🌿 1/4 cup powdered sugar
  • 🍫 3.5 oz white chocolate, melted
  • 🎨 Pink food coloring
  • 🌿 Chopped pistachios (for decoration)

Directions:

🥄 Preheat the oven:

  1. Preheat your oven to 350°F (180°C). Line a baking sheet or rectangular pan with parchment paper.

🌿 Prepare the pistachio sponge:

  1. In a bowl, combine 🌿 flour, 🌿 ground pistachios, and 🍬 1/2 cup sugar.
  2. Gently fold in 🥚 whipped egg whites using a spatula to maintain the airy texture.
  3. Spread the batter into a thin, even layer on the prepared baking sheet.
  4. Bake for 10–12 minutes until lightly golden. Let it cool, then cut into three equal rectangles.

🍓 Prepare the raspberry mousse:

  1. Mix 🍓 raspberry purée with 🌿 powdered sugar.
  2. Whip 3/4 cup heavy cream to stiff peaks.
  3. Fold the raspberry purée into the whipped cream to create a light mousse.

🍰 Assemble the layers:

  1. Place one rectangle of pistachio sponge on a serving plate or mold.
  2. Spread a generous layer of raspberry mousse on top.
  3. Repeat with the remaining sponge layers, finishing with a layer of mousse on top.

🌸 Make the pink mirror glaze:

  1. Melt 🍫 white chocolate using a double boiler.
  2. Stir in 🎨 pink food coloring until the glaze is evenly tinted.
  3. Pour the glaze over the top of the cake, smoothing it with a spatula for a flawless finish.
