Herb-Crusted Beef Roast with Onions

📝 Ingredients (Serves 4):

  • 🥩 1.5 kg (3.3 lbs) beef roast
  • 🌿 4 bay leaves
  • 🧅 6 onions, sliced
  • 🍅 6 tomatoes
  • 🧄 1 garlic clove
  • 🧈 50 g (3.5 tbsp) butter
  • 🌾 1 tsp Herbes de Provence
  • 🧂 Salt, to taste
  • ⚫ Pepper, to taste

📋 Directions:

  1. 🔥 Preheat the Oven:
    Preheat the oven to 240°C (475°F).
  2. 🧄 Prepare the Beef:
    Rub the beef roast with the garlic clove and season with freshly ground pepper. Place the bay leaves on top of the roast and tie them securely with kitchen twine.
  3. 🧅 Sauté the Onions:
    In a roasting pan, melt 30 g (2 tbsp) of butter and sauté the sliced onions for 4–5 minutes until lightly softened.
  4. 🥩 Start Roasting:
    Place the beef roast on top of the onions in the pan. Dot the remaining butter over the roast. Roast in the oven for 40 minutes (12–15 minutes per pound for medium-rare).
  5. 🍅 Add the Tomatoes:
    Halfway through the cooking time, score the tomatoes with a shallow cross on top. Sprinkle with Herbes de Provence, salt, and pepper. Arrange them around the beef in the roasting pan.
  6. 🌟 Rest the Meat:
    Once the cooking time is complete, leave the roast to rest in the turned-off oven with the door slightly open for 10 minutes. This allows the juices to redistribute inside the meat.
