For the Cookies:
- πΎ 250 g flour
- π§ 125 g butter (softened)
- π₯ 1 egg
- π¬ 125 g sugar
- π 2 pinches of salt
For the Chocolate Ganache:
- π« 200 g dark baking chocolate
- π₯ 10 cl heavy cream
π Directions:
- π§ Prepare the Dough:
- Bring the butter to room temperature for about 1 hour.
- In a mixing bowl, sift the flour and make a well in the center. Add the butter in pieces, sugar, egg, and salt.
- Knead with your fingertips until the dough is smooth and homogeneous.
- βοΈ Chill the Dough:
- Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
- π₯ Cut Out the Cookies:
- On a floured surface, roll out the dough with a rolling pin.
- Use a round cookie cutter to cut out discs of dough. On half of the discs, use a bunny-shaped cutter to cut out a center design.
- Place all the discs on a baking sheet lined with parchment paper or a silicone mat.
- π§ Bake:
- Preheat the oven to 410Β°F (210Β°C).
- Bake the cookies for 6β8 minutes or until lightly golden. Let them cool completely at room temperature.
- π« Make the Ganache:
- Heat the heavy cream until just boiling.
- Break the chocolate into small pieces, place it in a bowl, and pour the hot cream over it. Stir until smooth and fully melted.
- β¨ Assemble the Cookies:
- Spread the chocolate ganache onto the full cookie discs. Top with the bunny-shaped cut-out discs to sandwich the ganache.
- Refrigerate for 1 hour to set the ganache.
