Almond and Honey Baklava

A classic Middle Eastern dessert, this almond and honey baklava features layers of flaky phyllo dough, a fragrant almond filling, and a luscious honey drizzle. Perfect for a sweet and indulgent treat!


📝 Ingredients (Serves 8)

  • 🥮 1 package phyllo dough
  • 🌰 500 g chopped almonds
  • 🍬 125 g granulated sugar
  • 🌿 1 tbsp ground cinnamon
  • 🌸 6 tbsp orange blossom water
  • 🍯 250 g liquid honey (acacia or similar)
  • 💧 50 ml water
  • 🧈 300 g butter, melted
  • 🥚 1 whole egg
  • 🥚 2 egg yolks
  • 🌰 20 whole almonds

📋 Instructions

1️⃣ Prepare the Almond Filling:

  1. 🌰 Pulse the chopped almonds in a food processor for 20 seconds to make them finer.
  2. 🥣 In a bowl, mix the almonds with sugar, cinnamon, and 4 tbsp orange blossom water.

2️⃣ Prepare the Phyllo Layers:
3. 🧈 Melt the butter in the microwave.
4. 🍞 Cut the phyllo sheets in half to fit a 30 x 20 cm (12 x 8 inch) baking dish.
5. 🍶 Layer 7 sheets of phyllo dough in the dish, brushing each one generously with melted butter.

3️⃣ Assemble the Baklava:
6. 🌰 Spread ¾ of the almond filling evenly over the phyllo layers.
7. 🍶 Add 5 more sheets of phyllo on top, brushing each with butter. Spread the remaining almond filling over this layer.
8. 🍞 Top with 10 more sheets of phyllo, brushing each with butter. Fold the edges inward to create a clean finish.
9. 🧈 Pour any remaining butter over the top, avoiding the milk solids.

4️⃣ Prepare and Bake:
10. 🔪 Cut the baklava into diamond shapes using a sharp knife.
11. 🥚 In a bowl, whisk the egg and egg yolks. Brush the top of the baklava with the egg mixture.
12. 🌰 Place a whole almond at the center of each diamond.
13. 🔥 Bake at 350°F (180°C) for about 35 minutes, or until golden brown.

5️⃣ Prepare the Honey Syrup:
14. 🍯 In a saucepan, heat the honey, water, and remaining 2 tbsp orange blossom water. Warm until well combined.

6️⃣ Finish and Serve:
15. 🍯 Once the baklava is out of the oven, drizzle the warm honey syrup evenly over the top. Let it soak in before serving.
